Last weeks' food drop included a three pound boneless ham, a ten pound bag of russet potatoes, onions, grated cheese, and two sweet potatoes. I put the ham in an electric roasting pan. I peeled and sliced two of the potatoes and one of the sweet potatoes and put them in the roasting pan beside the ham with the temperature set on high for two hours and low for four hours. While the pan was set on high, I added a little bit of water over the potatoes to be sure they cooked. 

My husband and I were able to eat lunch and supper for three days, or six meals. There was still ham left, so I cut a thick slice and diced the ham. I added a small onion that was also in the food box and a pepper from our garden. No garden? Walmart sells a mix of onion, red pepper and green pepper in the freezer section for one dollar. I sautéed the ham, pepper and onion then added some cheese and a whisked egg to make an omelet. 

We still have half the ham left. It was frozen to start with, so it was difficult to cut in in half and only cook half. We knew we were going to eat ham all week. I plan to use the one pound bag of pinto beans from the food box for ham and beans. I will make another Denver omelet, because yum! One meal will be a ham steak with fried eggs and hash browns. One lunch will be homemade ham salad sandwiches. One more ham steak meal for supper with rice and a vegetable. And finally, I will make a soup with the last piece of ham. I can use the onion, potatoes, carrots and evaporated milk that came with the food box. The only items I needed that didn't come with the box were the spice pepper, rice, and chicken stock.
