One of the food drops had a bag of big giant carrots and a case of cream of chicken soup. It seemed like a good time to make a chicken casserole with biscuits. You can make the casserole any size. There are two people in my house, so I used two chicken breasts. I added 4 large carrots because we like vegetables. I also put in some diced celery simply because we had some older celery that had to be use up. The box of Rice A Roni was on clearance for .50 cents. I used a rectangle shaped crock pot for this meal.
Put the rice and its' seasoning packet in the crock first. Add the cream of chicken soup, and two soup cans filled with water. Cut the chicken up into pieces. Add the sliced carrots and stir. Salt and pepper if desired. Cook on high for 4 hours.
I baked biscuits to go with the casserole. Sometimes, I like to put a biscuit in a bowl first and top with the casserole. This recipe is good for seniors. The meat is in smaller pieces. The rice and meat is saturated with the soup style gravy, making it easy to swallow and digest. It reheats nicely. We had eight meals with this recipe.
