Chili pie is oh so good! The free food drop this month had cheese, hamburger, some onions, canned corn and canned kidney beans. All we needed to purchase was a .50 box of corn bread mix and a .79 cent packet of taco seasoning. 

Just make the cornbread mix as directed on the package and place in a pie tin or and 8" square pan. Use a skillet on the stove to sauté the hamburger and onion. Add half the taco seasoning and stir it in. Open the can of corn and the can of kidney beans. Dump the contents into a colander, rinse and drain. The add to the hamburger mix on the stove.  Stir everything together. 

Once everything is heated through, pour the contents of the skillet over the cornbread mix. Top with shredded cheese. We use what we have, but shredded Mexican blend is our favorite. Place the pie pan in the oven and bake. Use the baking instructions on the box for the cornbread. The cornbread needs to cook and the cheese needs to be melty. If you have extra money, the meal goes great with Cole slaw. We get about 8 servings from this recipe. We have used a bigger pan and made the cornbread spread a bit thinner if we are having company. It's an easy recipe to stretch by adding an extra can of beans.
