I did not buy anything for a Thanksgiving meal as we planned to go to a friend's home for the day. I did plan to make a cowboy bean casserole to bring along. I felt pretty punk the night before and blew a fever during the night, so I didn't feel comfortable going to someone's home with 40 people in this pandemic era. 

My husband had a long face, so we looked through the pantry and the freezers and came up with a Thanksgiving meal. The stores were closed, so that wasn't an option. I'd baked a food drop ham earlier in the week, so we had that for our meat. 

It was easy enough to make rolls from scratch, so I put some bread dough down to proof. The food drop also included a turkey gravy packet, a bag of cornbread stuffing, a bag of potatoes, cans of green beans, a can of cream of mushroom soup, and a bag of crispy onions. We already had a can of cranberry. 

I used an egg from our chickens added to the stuffing mix, along with water. The mix seemed a bit lacking, so I added some chicken broth that we had in the freezer and a bag of Aldi's 9 grain rice mix. We ended up with a decent holiday meal that included green bean casserole, fresh rolls, ham, the cowboy beans, baked potatoes, and the cranberry sauce. We have a lot to be thankful for.
