This summer has been a bit awkward for me in terms of keeping up with the pantry, the garden, and the grocery shopping. I took on several week to two-week pet and livestock sitting jobs where I stay in other people's homes for the duration. So, my schedule is off. My husband went to the grocery and found an entire dairy case of items on close out. We ended up with a months' worth of cream cheese, yogurt, half and half, cheese, butter and milk. 


I also did some pantry clean up and organizing. Turns out we had several bags of beans that were past the use by date. So, I mixed them together and made a bean soup with 4 cups of the beans. I soaked the rest of the dried beans for a day in water, then mashed them up with flax seed to feed to the chickens. 


We had a short three-day break in the 100-degree heat. I pulled some chicken breasts from the freezer. One of the fall food drops had a stuffing mix, a case of cream of chicken soup, and a box of chicken broth. I made up the stuffing mix, added a 7-grain rice mix and a can of cream of chicken soup, then spread that over the chicken. The big giant crock pot type roaster was brand new at a yard sale for $5. The house smelled wonderful all afternoon. We were able to get 7 meals out of the recipe. I buy the chicken at Aldi because it is not only good, but it also isn't that expensive. I also get the 7-grain rice from Aldi. It was $1.99 a bag but is not $2.29 at my local Aldi. The style of rice is packaged in packets that only require a 90 second time in the microwave. The rice also comes in Basmati and Jasmine. I use the Basmati rice as a compliment to meals with fish and the Jasmine with stir fry. Last year they also had brown rice, but I haven't seen that at all this year packaged like the other flavors.
